Madeleine's kumala and tuna burgers
Madeleine is the Province's HR officer and she told me this recipe on our way home from work one day. I've tried it. It's nice.
Peel and slice a couple of large kumalas. Boil, drain and mash. To this add a tin of tuna (without the oil). Add some finely cut spring onions, pepper, salt and other herbs and/or vegetables as desired. Mix well and shape into burgers. Coat with flour and shallow-fry until crisp and brown. Enjoy!
