Ellon's kumala salad

Ellon is my colleague who works in the registry. She made this dish for the mega-kakae at the opening of the new village hall in her village Litslits.
 
Peel and slice two large kumalas. Peel and slice one quarter of a pumpkin. Boil seperately 'al dente'. Hard boil 4 eggs. Cut all these in tiny little cubes. Mix together in a bowl. Add a cup of thick coconut milk. Add some vinegar, vegetable oil and salt to taste. Sprinkle with thinly sliced spring onions (green part only) and a medium sized deseeded tomato cut in tiny cubes. Can be eaten hot or cold. Enjoy!

wat leuk dat de foto's nu te zien zijn (mijn pc was even uit de lucht).
Ik mail je verder op je privemail, gaat je jaloersmakende trip door??
